Peach Jam

Fresh home-made jams are always refreshing. I am not a fan of having peaches as such but this is a good spread for bread and rotis, toppings for ice creams. This recipe yields 70g of Pulpy peach reserve/jam. One Pot One shot method is used to prepare this jam inspired by base recipe of OPOS Chef Mr.Ramakrishnan sir.

Method:

  1. Add 3 tblspn of water in a 2L pressure cooker.
  2. Add 4 small/medium size chopped ripe peaches.
  3. Add 1/2  tspn of dry ginger powder, 3 drops of vanilla essence,1 crushed cardamom,1 cinnamom stick on top of it.
  4. Add 1/2 cup+ 1 tspn of brown sugar as second layer.
  5. I used induction stove to prepare this. Place the cooker on high (100 degree celcius or 500 W) for 20 min.
  6. Release pressure and the jam is ready. Just take care of any burnt smell, switch off immediately then.
  7. Mash the peaches as much as needed. I used it pulpy. You can also grind it for a smooth jam after cooling it.

Store it in air tight container and use it in within few days for fresh taste.

  1. Adjust the quantity of peach and sugar proportionately for required final quantity of jam.
  2. Sugar can be decreased if needed.
  3. You can replace peaches with two apples too.
