Vegetable Salad with Honey Vinaigrette

This is a quick and tasty salad for weight loss. Loaded with so many vegetables, this can be a nutritious breakfast of the day.

Method:

  1. Chop vegetables like carrots,tomatoes,onions,olives,lettuce,cucumber,capsicum.
  2. I used both green and red lettuce.
  3. Finely chop almonds and add to this. You can also add walnuts.
  4. For dressing, mix 1/4 cup of honey, 1/4 cup of apple cider vinegar, 3/4 cup olive oil, 2 tspn water, pinch of salt and pepper.
  5. Mix the dressing well with hand blender or spoon.
  6. Adjust taste of honey/vinegar  as per your need. Instead of vinegar you can also use 1-2 tblspn of lemon juice.
  7. Fresh salad is good to go.

 

  1. You can also add veggies of your choice like zucchini,broccoli(steamed/tossed),spring onions.
