A refreshing salad for breakfast gives a very good start of the day. This salad combines the goodness of fresh vegetables and nuts providing almost part of all the necessary vitamins and minerals needed for a day. This includes a nutty paste made of sesame and peanut as dressing, making it an extended form of Mid-eastern Tahini. This is good for weight loss as well as a healthy snack for school going kids.
Method:
- Combine vegetables like onion,tomato,capsicum,carrot,black olives,coriander and any other veggies you would prefer.
- Make a thick paste of white sesame seeds,peanuts/groundnut,a tblspn of lemon juice,few garlic cloves,salt and a dry red chilli. Add water and gingelly oil for smoothening.
- In a pan, add olive oil and slightly roast nuts like almonds,flax seeds,walnuts and cucumber seeds for 2-3 minutes. Add it to the salad.
- Add salt and pepper, lemon juice as per taste to the salad and add the nutty sauce finally as needed.
This salad can be eaten fresh or refrigerated.
The picture includes few over-easy egg strips for my eggetarian dear husband. Never mind 🙂
- Seeds/nuts like pumpkin seeds,white sesame seeds,chia seeds can also be added.
- Veggies like sprouts,cucumber,zucchini,cabbage,corn go well with this salad.
- You can add palm sugar to the nutty sauce for a tinge of sweetness.
