Arrabbiata, popularly called as Red sauce is a fiery sauce made out of tomato,chilli flakes and garlic. I will share a quick process to make it from scratch, with Spaghetti pasta (you can use Penne too) and vegetables. This is made mostly with less vegetables and Parmesan cheese.
Method:
- Take 6-7 ripe big tomatoes in a pressure cooker, chopped roughly to 3-4 pieces,1 tsp salt and approx 1.5cups water. Leave it for 3 whistles. Peel the skin after cooling it down. Save the tomato water.
- Grind the tomatoes roughly or smash it well.
- Alternatively, you can boil tomatoes as a whole and peel the skin. The above is easier for me.
- Cook 30-40 strands of Spaghetti in water as per your need for 2 or 3 members. I would cook in pressure cooker for 2 whistles. Drain and save pasta water. Add just right amount of water and salt to cook.
- Add peas and mushrooms.Toss them in olive oil for 3-5 min till it is slightly roasted. Keep it aside
- Add garlic and onion in a pan with olive oil,1 tsp butter and stir for 2 min.
- Now add tomato paste,herbs and chilli flakes as per hotness you need. I added 2-3 tsp only.
- Let it cook on medium high for 5 min. If you dont have chilli flakes, you can dry roast 2-3 dry red chillies and powder it.
- Add cooked pasta,vegetables,cheese of your preference,olives and fresh basil. Fresh basil or oregano leaves give a special flavour.
- Adjust salt. You can add crushed black peppers also. If you need more saucy, add pasta water. Else let the tomato sauce cook for some more time and thicken.
- I would also add 1/2 cup of milk at the last for bringing down the hotness from chilli and get a mild creaminess.
- Add some more olive oil and serve warm.
- You can add any vegetables of your choice like broccolica,bell peppers,zucchini,carrots,eggplant or corn.
- Other pasta forms like Penne,farfelle goes well with this sauce.
- You can use up to 10 tomatoes too for more tangy sauce.
