Vegetable Pudding

This is an interesting and extremely healthy combination of 3 famous halwas made Indian style- Carrot,bottle gourd and Pumpkin(yellow). This is mainly good for improving vision as it is rich in Vitamin A and can be left sugar-free due to natural sweetness of the vegetables.

Method:

  1. This is completely a pressure cooker OPOS method. I used a 2L pressure cooker for this.
  2. In the cooker, add 1/3 cup of water,1/4 cup of milk and 1.5 tspn of ghee.
  3. On top of it, layer 1/2 cup of grated carrot (layer 1), 1/4 cup of grated bottle gourd (layer 2), 1/2 cup of grated yellow pumpkin(layer 3).
  4. Add 1 tspn of palm sugar or powdered palm candy.
  5. Allow for 6 whistles on high. I used induction stove and the optimal temperature was 130 degrees/800 W.
  6. This takes  around 5-7 minutes.
  7. Open after pressure settles. Beautiful pudding will be ready. If you have left over water, you can allow it to get absorbed mixing it in low flame or leave as it is to a bit watery kheer consistency.
  8. Finally add cardamom powder,roasted cashew,raisin or nuts of your choice.
  9. I used a powdered nuts mix consisting of pista,almond,cashew,walnut and cardamom finally.

Serve it warm.This gives around 2 cups of dessert bowl (or 1 large bowl of sweet snack :)) This is good for babies as well and you can even avoid palm sugar for under 1 year old ones.

 

  1. You can increase the amount of palm sugar/brown sugar if you need additional sweetness. Sweet koya or condensed milk can also be an awesome addition.
  2. If using a bigger pressure cooker, try adding some more water initially and check for burnt smell. Alternatively, Whistles can be 4 and increased as needed after opening the cooker. It will be softer but not mushy.
  3. Milk can be avoided and replaced with water or almond/soya milk for making it vegan. Ghee is also optional.
